italian essentials: sausage cakes in tomato sauce

This is one of those recipes where I just wanted to see what I could come up with… And this is it. You’ve heard of crab cakes; well, these are Italian sausage cakes. They are a minimum of work to assemble, and look (and taste) awesome. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1/2 pound italian sausage, mild or hot, your choice
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 2 tablespoons ricotta cheese
  • 1 teaspoon powered mustard
  • 3 tablespoons dry bread crumbs
  • - salt, kosher variety to taste
  • - black pepper, freshly ground, to taste
  • - tomato sauce, your favorite, for serving
  • - cheese for topping, your choice

How To Make italian essentials: sausage cakes in tomato sauce

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Add the Italian sausage to a pan over medium heat.
  • Step 4
    Sauté, breaking apart with a wooden spoon until thoroughly cooked.
  • Step 5
    Chef's Tip: Don't crumble the sausage too fine... leave it a bit chunky.
  • Step 6
    Allow to drain on paper towels, and thoroughly cool.
  • Step 7
    In a medium bowl, whisk together the egg, mayonnaise, ricotta cheese and powdered mustard.
  • Step 8
    Add the bread crumbs and Italian sausage, and combine.
  • Step 9
    Chef’s Note: Season with a bit of salt and pepper, to taste.
  • Step 10
    Divide into four cakes… like crab cakes.
  • Step 11
    Place into a lightly oiled sauté pan, over medium heat.
  • Step 12
    Cook until nice and brown, about 4 to 6 minutes per side.
  • Step 13
    Place some cheese on top (I’m using provolone).
  • Step 14
    Put under a broiler until the cheese is bubbly.
  • Step 15
    PLATE/PRESENT
  • Step 16
    Place on a plate with some warm tomato sauce, and maybe a sprinkle, or shave of Parmesan. Enjoy.
  • Step 17
    Keep the faith, and keep cooking.
