island pork tenderloin

This recipe was something my husband and I were introduced to through a workout program that we started. We were skeptical that anything "healthy" in our diet book could possibly taste good, but we were blown away! This is so flavorful and unique that we fell in love with it right away! If you are looking for something to get you out of a rut this is a good one to try! It's got a little bit of all the flavor spectrums!

Ingredients

  • 1 pound pork tenderloin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon chile powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 2 tablespoons olive oil
  • 1/4 cup brown sugar, firmly packed
  • 1/2 tablespoon fresh garlic finely chopped
  • 1/2 tablespoon tabasco sauce or other hot sauce

How To Make island pork tenderloin

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Mix salt, pepper, cumin, chile powder, and cinnamon together. Coat all sides of pork.
  • Step 3
    Heat oil in a 12 in skillet over moderately high heat and brown pork turning about 4 minutes.
  • Step 4
    Mix brown sugar, garlic and tabasco until well combined. Place tenderloin in roasting pan or other baking dish. Spread brown sugar mixture all over the top of the tenderloin.
  • Step 5
    Place in oven and bake for 20 minutes or until juices run clear.
