island pork tenderloin
Wow, I am so excited!!! I finally conquered the "pork tenderloin" tonight for dinner. I have tried making this several time with no success. It would always come out very tough because I would over cook it. This came out so tender, moist and delicious with the seasoned crust on the outside it was spicy too! My husband & I both loved this delicious recipe from P90X nutritional cookbook.

Ingredients
- 16 ounces pork tenderloin, lean
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon chile powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- 2 teaspoons olive oil
- 1/4 cup brown sugar, firmly packed
- 1/2 tablespoon fresh garlic, finely chopped
- 1/2 tablespoon tabasco sauce
How To Make island pork tenderloin

Step 1Preheat oven to 350 degrees. Stir together salt, pepper, cumin, chile powder, and cinnamon, then coat pork with the spice rub.

Step 2Heat 1 TBSP oil in a 12-inch skillet over moderately high heat and brown pork turning onto all sides about 4 minutes on each.

Step 3Stir together brown sugar, garlic, and Tabasco and pat onto top of tenderloin.

Step 4Place pork in a roasting pan and cook in the oven for 20 minutes. Afterwards remove from oven and let sit for 10 or 15 mintes.

Step 5September 16th, 2015 --- Made this for dinner tonight and added a delicious homemade Sweet & Spicy Chili Sauce that I traded for at a Food Swap. It put this tenderloin over the top in delicious flavors!
