indiana bean barbecue
This is a variation on several other barbecue bean recipes I have seen but the only one I know of using hominy. An easy preparation and then stick it in the oven. Photo from: BH&G Oven Meals

Ingredients
- 8 slices bacon, chopped
- 1 cup chopped onion
- 2 cans (20 oz. ea.) yellow hominy, drained
- 2 cans (16 oz. ea.) red kidney beans, drained
- 1 can (15 oz.) tomato sauce
- 1/4 cup canned chopped green chili peppers
- 2 tablespoons vinegar
- 2 teaspoons worcestershire sauce
- 2 teaspoons prepared mustard
- 1 teaspoon salt
How To Make indiana bean barbecue

Step 1Cook the bacon till almost crisp; drain, reserving 2 Tbsp. drippings. Cook onion in reserved drippings till tender but not brown.

Step 2Combine onion and bacon with remaining ingredients and turn into a 2-qt. casserole.

Step 3Bake, uncovered, in a pre-heated 350-degree oven for 1-1/2 hours. Serve with Cheesy Cornbread (see my recipe).
