Ingredients
- 5 pounds pork shoulder butt
- 1 cup red wine
- 1 cup chopped fresh parsley
- 5 teaspoons salt
- 1 tablespoon garlic powder or 4-5 garlic cloves,minced
- 1 tablespoon fresh ground black pepper
- 3 teaspoons cayenne pepper
- 5 tablespoons fennel seeds
- 2 teaspoons crushed chili pepper flakes
- 5 tablespoons paprika,i use hot hungarian
How To Make hot italian sausage

Step 1hand trim fat from outside meat to your specs. Grind the meat- semi coarsely

Step 2After grinding, add all the seasonings & wine. I like to pour the wine into the spices, mix well & pour all over the meat, mix very well untill all meat has developed that orange color! May want to use hands, pull of wedding ring(s). make sure hands clean! please, I stress keep cool!

Step 3Either stuff into hog casings 33-35mm.. or freeze in 1/2# chubs. I form mine into small squares,wrap w/plastic wrap, then vacuum pack, most do not have this oppertunity so butcher paper is next alt. Enjoy the awesome smell as you are working!
