makes 5#.,this is my go to recipe for Italian, has a touch of heat but the flavors blend so well,don't omit the red wine,thats what makes it authentic. Burgundy or a Merlo works for me! enjoy Italy at Home!

5 lb
pork shoulder butt
1 c
red wine
1 c
chopped fresh parsley
5 tsp
1 Tbsp
garlic powder or 4-5 garlic cloves,minced
1 Tbsp
fresh ground black pepper
3 tsp
cayenne pepper
5 Tbsp
fennel seeds
2 tsp
crushed chili pepper flakes
5 Tbsp
paprika,i use hot hungarian


1hand trim fat from outside meat to your specs.

Grind the meat- semi coarsely
2After grinding, add all the seasonings & wine. I like to pour the wine into the spices, mix well & pour all over the meat, mix very well untill all meat has developed that orange color! May want to use hands, pull of wedding ring(s). make sure hands clean!
please, I stress keep cool!
3Either stuff into hog casings 33-35mm.. or freeze in 1/2# chubs. I form mine into small squares,wrap w/plastic wrap, then vacuum pack, most do not have this oppertunity so butcher paper is next alt. Enjoy the awesome smell as you are working!
