Hot Italian Sausage
5 lbpork shoulder butt
1 cred wine
1 cchopped fresh parsley
1 Tbspgarlic powder or 4-5 garlic cloves,minced
1 Tbspfresh ground black pepper
3 tspcayenne pepper
5 Tbspfennel seeds
2 tspcrushed chili pepper flakes
5 Tbsppaprika,i use hot hungarian
How to Make Hot Italian Sausage
- hand trim fat from outside meat to your specs.
Grind the meat- semi coarsely
- After grinding, add all the seasonings & wine. I like to pour the wine into the spices, mix well & pour all over the meat, mix very well untill all meat has developed that orange color! May want to use hands, pull of wedding ring(s). make sure hands clean!

- Either stuff into hog casings 33-35mm.. or freeze in 1/2# chubs. I form mine into small squares,wrap w/plastic wrap, then vacuum pack, most do not have this oppertunity so butcher paper is next alt. Enjoy the awesome smell as you are working!
