This is a great fall recipe! My daughter (who has a busy life style in NYC) introduced this recipe to me a couple years ago when she started a Paleo diet plan. It's quick and easy to put together in the crock pot or slow cooker, makes your kitchen smell wonderful, and is absolutely delicious! Once the pork is shredded, you may serve any way you wish - simply on a plate with some roasted veggies or potatoes for a side dish, or serve it up on buns for sandwiches.

Ingredients

  • 1/2 cup beef or chicken broth
  • 1 - yellow onion, sliced
  • 2-3 pounds pork loin roast
  • 2 - apples, cored and sliced
  • 1 tablespoon raw honey
  • 2 tablespoons freshly grated ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 2 - garlic cloves, peeled and smashed
  • 1 - bay leaf

How To Make honey ginger apple shredded pork

  • Step 1
    Pull out your crockpot.
  • Step 2
    Pour in broth, then onions.
  • Step 3
    Place pork loin roast on top of onions,then add apples, honey, spices, garlic cloves, and bay leaf to the pot.
  • Step 4
    Cover and cook on LOW for 8-10 hours or HIGH for 6-8 hours.
  • Step 5
    Use tongs or fork to shred the pork, stirring to combine with other cooked ingredients.
  • Step 6
    Serve and enjoy!
