There are just some dishes that once you have tasted the first bite, take you back to childhood in a snap. My Grandfather would use a combination of breakfast sausage and ground beef while my mom always used a full pound of ground beef. Either way, this is a wonderful dish. It would surprise me to hear if anyone had any leftover for lunch the next day.

  1. On medium heat cook ground beef and onion until ground beef is browned and onion is translucent. Drain grease and salt and pepper to taste. (Season a little heavier than normal - to season the rice)
  2. Preheat oven to 350 degrees. In a large mixing bowl combine ground beef mixture, cooked rice, and 1 1/2 cups shredded cheese. Pour mixture in a greased 2 quart casserole dish.
  3. Top with remaining 1/2 cup shredded cheese. Bake 20 minutes until cheese is melted and casserole is piping hot.
