This is great for a light lunch or supper especially when it is cold. Toss a few leaves of spinach on it along with pasta and grated cheese. YUMMY! It is even better when shared. Don't forget the ginger mint tea as beverage!

Ingredients
- 1 pound italian pork sausage
- 1 medium onion
- 1 clove garlic
- 1 can great northern beans
- 1 can garbanzos, cooked
- 1 can beans
- 1 medium zucchini
- 1 large carrot
- 1 - sweet yellow pepper
- 1 small jalapeno peppers
- 8 cups broth, low sodium
How To Make hearty italian sausage soup

Step 1Brown Italian Sausage at medium heat.

Step 2Diced medium onion.

Step 3Cube zucchini. Julienne carrots.Mince 1 garlic clove. slice 1 jalapeno pepper.

Step 4Open two cans of diced tomatoes.

Step 5Drain and rinse 4 can of beans: cannelloni, red kidney, northern, and garbanzo beans.

Step 6Add the onions and garlic to saucepan. saute to translucent state. Stir in other vegetables and tomatoes. Stir in beans. Add low sodium Italian seasonings, about two teaspoon. Add 8 cups of chicken or turkey stock. Bring to a rolling boil. Lower heat and simmer for about an hour.
