Ingredients

  • 2 cups freshly sliced mushrooms
  • 1 cup thinly sliced carrots
  • 1/2 cup chopped onion
  • 1 teaspoon vegetable oil
  • 1 clove garlic,minced
  • 12 ounces bulk pork sausage
  • 1 can cream style corn
  • 10 ounces spinach, frozen,thawed and squeezed dry
  • 1-1/2 cup barley,cooked
  • 3 - green onions,chopped
  • 1 teaspoon dried savory
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1/2 cup shredded parmesan cheese

How To Make hearty barley bake

  • Step 1
    In a large skillet, saute the mushrooms, carrots and onion in oil until tender. Add garlic; cook 1 minute longer. Transfer to a large bowl.
  • Step 2
    In same skillet, cook sausage over medium heat until no longer pink; drain. Add to mushroom mixture. Stir in the barley, corn, spinach, onions, savory, thyme, marjoram.
  • Step 3
    Transfer to a greased shallow baking dish. Cover and bake at 350 for 40 minutes. Sprinkle with cheese. Bake, uncovered, 5 min longer or until cheese is melted
