For those who are looking for a healthier slow cooker soup that also delivers great taste. The apples sweeten the broth and makes for a great tasting dish. I found this recipe in a Better Homes and Garden book.

Ingredients For healthy slow cooker lentil soup

  • 1 lb
    lean bonless pork-cut into 1/2" pieces
  • 1 c
    dry lentils--rinsed and drained
  • 3
    cooking apples-peeled, cored, chopped
  • 1 tsp
    dried marjoram, crushed
  • 3 1/2 c
    beef broth

How To Make healthy slow cooker lentil soup

    Lightly coat skillet with cooking spray. Brown pork over med heat until brown. Drain.

    Place pork in 4 quart slow cooker. Add rest of ingredients and stir to mix.

    Cover and cook on low setting for 6 to 8 hours or on high setting 3 to 4 hours.
