healthy shredded pork sandwiches
I took this over to my friend when she came home from the hospital and everyone loved it. I served with tomato/cucumber salad and corn on the cob. Simple and healthy!

Ingredients
- 3 pounds boneless pork roast
- 1 teaspoon garlic powder
- 3 teaspoons mrs dash (you pick the flavor)
- 2 teaspoons black pepper
- 1 - onion, cut into thin wedges
- 1/2 cup water
- 1/4 cup apple cider vinegar
- 1/4 cup bbq sauce (sugar-free) or regular kind
- 1/2 cup juices (skim fat from juices)
- - apple slaw (no mayo)
- - whole wheat buns
How To Make healthy shredded pork sandwiches

Step 1In a small bowl, stir together garlic powder, mrs dash, and pepper. Trim fat from meat. Sprinkle pepper mixture evenly over meat; rub in with your fingers. If necessary, cut meat to fit into a slow cooker.

Step 2Place onion in the bottom of slow cooker. Add meat. Pour the water and vinegar over meat.

Step 3Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Remove meat and onions from cooker to a cutting board; discard all but 1/2 cup of cooking liquid. Using two forks, pull meat apart into shreds. Cut up onions and place on shredded pork.

Step 4In small bowl, combine juices with BBQ sauce. Drizzle on shredded pork and stir to lightly coat.
