healthy shredded pork sandwiches

I took this over to my friend when she came home from the hospital and everyone loved it. I served with tomato/cucumber salad and corn on the cob. Simple and healthy!

Ingredients

  • 3 pounds boneless pork roast
  • 1 teaspoon garlic powder
  • 3 teaspoons mrs dash (you pick the flavor)
  • 2 teaspoons black pepper
  • 1 - onion, cut into thin wedges
  • 1/2 cup water
  • 1/4 cup apple cider vinegar
  • 1/4 cup bbq sauce (sugar-free) or regular kind
  • 1/2 cup juices (skim fat from juices)
  • - apple slaw (no mayo)
  • - whole wheat buns

How To Make healthy shredded pork sandwiches

  • Step 1
    In a small bowl, stir together garlic powder, mrs dash, and pepper. Trim fat from meat. Sprinkle pepper mixture evenly over meat; rub in with your fingers. If necessary, cut meat to fit into a slow cooker.
  • Step 2
    Place onion in the bottom of slow cooker. Add meat. Pour the water and vinegar over meat.
  • Step 3
    Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Remove meat and onions from cooker to a cutting board; discard all but 1/2 cup of cooking liquid. Using two forks, pull meat apart into shreds. Cut up onions and place on shredded pork.
  • Step 4
    In small bowl, combine juices with BBQ sauce. Drizzle on shredded pork and stir to lightly coat.
  • Step 5
