Yum, dried seasonal fruit and pork go to together so well! I usually serve w/ a light stuffing mix of day old bread and spices, w/ some fruit, like cranberries.

Ingredients
- 2 - bone-in or pork loin, 1"-thick pork chops
- 1 cup apple chopped, it's up to you if you want the apple peeled, i don't peel them
- 1 cup dried, chopped apricots
- 1/2 cup frozen cranberries
- 1 - onion, chopped
- 2 - celery ribs, chopped
- 1 cup apple juice
- 1/2 cup light brown sugar
- 1 teaspoon each, salt and pepper
- 1-1/2 tablespoon cornstarch
- 2 tablespoons cold water

Step 1Combine all ingredients, except cornstarch and water in lg bowl, add to slow cooker. Cover, cook on low about 7 hrs. 30 mins before serving, pour liquid from cooker into a bowl. Skim off any fat.

Step 2Stir in cornstarch and water, mix and pour into cooker. Stir. Cook, stirring, until thickened. Spoon sauce over chops, making sure to get some of the fruit on each chop.
