Yum, dried seasonal fruit and pork go to together so well! I usually serve w/ a light stuffing mix of day old bread and spices, w/ some fruit, like cranberries.

Ingredients

  • 2 - bone-in or pork loin, 1"-thick pork chops
  • 1 cup apple chopped, it's up to you if you want the apple peeled, i don't peel them
  • 1 cup dried, chopped apricots
  • 1/2 cup frozen cranberries
  • 1 - onion, chopped
  • 2 - celery ribs, chopped
  • 1 cup apple juice
  • 1/2 cup light brown sugar
  • 1 teaspoon each, salt and pepper
  • 1-1/2 tablespoon cornstarch
  • 2 tablespoons cold water

How To Make healthy harvest pork chops

  • Step 1
    Combine all ingredients, except cornstarch and water in lg bowl, add to slow cooker. Cover, cook on low about 7 hrs. 30 mins before serving, pour liquid from cooker into a bowl. Skim off any fat.
  • Step 2
    Stir in cornstarch and water, mix and pour into cooker. Stir. Cook, stirring, until thickened. Spoon sauce over chops, making sure to get some of the fruit on each chop.
