Yum, dried seasonal fruit and pork go to together so well!
I usually serve w/ a light stuffing mix of day old bread and spices, w/ some fruit, like cranberries.

bone-in or pork loin, 1"-thick pork chops
1 c
apple chopped, it's up to you if you want the apple peeled, i don't peel them
1 c
dried, chopped apricots
1/2 c
frozen cranberries
onion, chopped
celery ribs, chopped
1 c
apple juice
1/2 c
light brown sugar
1 tsp
each, salt and pepper
1-1/2 Tbsp
2 Tbsp
cold water

How to Make Healthy harvest pork chops


  • 1Combine all ingredients, except cornstarch and water in lg bowl, add to slow cooker. Cover, cook on low about 7 hrs. 30 mins before serving, pour liquid from cooker into a bowl. Skim off any fat.
  • 2Stir in cornstarch and water, mix and pour into cooker. Stir. Cook, stirring, until thickened. Spoon sauce over chops, making sure to get some of the fruit on each chop.
