Grilled Pork Loin Skewers - Cuban Style

This delicious grilled pork calls for "sour orange" juice (Seville oranges). If sour orange is not readily available, you can make your own by mixing 3 parts regular orange juice and 1 part lime juice.

  • 4 clove
    garlic, minced
  • 6 Tbsp
    fresh cilantro, chopped (divided)
  • 3 Tbsp
    fresh flat-leaf parsley, chopped
  • 1 tsp
    ground cumin
  • 1 tsp
    ground oregano
  • 1 tsp
    ground black pepper
  • 1 tsp
  • 3/4 c
    sour orange juice - seville orange (or a combination of orange and lime juice -ratio of 3 parts orange to 1 part lime)
  • 1/4
    regular orange juice
  • 1 1/2 lb
    boneless pork loin or tenderloin, cut into 1 inch cubes
  • 1 Tbsp
    olive oil
  • 1 small
    onion, thinly sliced
  • 1
    lime, cut into 4 wedges

How to Make Grilled Pork Loin Skewers - Cuban Style


  1. Combine garlic, 3 tbsp. cilantro, parsley, cumin, oregano, salt, pepper and sour orange juice. and regular orange juice. Mix well.
  2. Add the pork cubes and toss to coat. Allow pork to marinate at least 4 hours - toss the pork several times.
  3. Drain and thread the pork cubs onto skewers. Brush with oil.
  4. Grill the pork until browned and cooked through - turning several times while grilling. Grill onion slices or serve raw - over the pork. Garnish the pork with lime wedges and the remaining chopped cilantro. Squeeze lime over the pork when serving.
