green curry sauce with spicy pork sausage
I hope that you will enjoy this spicy green curry pork sausage dish that was inspired by my Thai spicy fried pork recipe. The surprise ingredient is the Hot Italian Sausage. It worked beautifully in this dish which I served over Jasmine Rice. I bet it would also be tasty over noodles.

Ingredients
- 1 tablespoon sesame oil
- 2 tablespoons peanut oil
- 1/2 small red onion, finely sliced
- 2 medium shallots, finely minced
- 1 - inch ginger, fresh, finely minced
- 3 cloves garlic, finely minced
- 1 small fresh, sweet yellow bell pepper, sliced 1/2 inch pieces
- 5 hot italian sausages, raw, casing removed
- 2 tablespoons green curry
- 1 cup green peas or green beans, fresh, chopped
- 3/4 cup pineapple, fresh, medium, chunks (optional)
- 2 (400ml) cans unsweetened coconut milk (reserve 200 ml for rice)
- 2 1/2 tablespoons palm sugar, coconut sugar or brown sugar
- 1 tablespoon fish sauce
- 1 teaspoon fresh, lime rind, finely minced
- 2 - fresh limes, juiced
- 1/4 cup fresh cilantro, coarsely chopped
- RICE
- 1 1/4 cups water, cold
- 200 ml coconut milk, unsweetened
- 1/2 teaspoon sea salt
- 1 cup jasmine rice
- GARNISHES
- 2 limes, quartered
- 1/4 cup cilantro, mint or basil, finely sliced
How To Make green curry sauce with spicy pork sausage

Step 1Rice Add water, coconut milk and salt to a small pot, cover pot with lid and place on high heat until it boils. Add rice, stirring well; once it starts to boil, cover with lid and reduce heat to lowest setting. Cook for 15 minutes, until all the water is absorbed, then remove from heat. Stir with a fork to fluff the rice and set aside covered until needed.

Step 2Sauce To start place a large pot on medium high heat and add the peanut and sesame oils. Once the oil is heated add the red onion, shallots, ginger, garlic and sweet yellow peppers and fry for 3 minutes. Add the raw, sausage meat and cook for 7 minutes, stir often and drain if necessary.

Step 3Next add the green curry paste and stir gently for 3 minutes, making sure to coat everything in the curry to allow its flavors to develop. Taste and season with salt if necessary.

Step 4Now add the green peas or green beans and pineapple chunks, then slowly add the remaining coconut milk, water, brown sugar, fish sauce, lime rind, lime juice and cilantro to the pot, stirring until well blended.

Step 5Increase the heat until the mixture boils, then lower to a simmer for 10 minutes, stirring occasionally.

Step 6Taste and adjust seasoning with more fish sauce or sugar. Stir 2 minutes then serve over jasmine rice. Garnish with chopped cilantro and lime wedges.
