garlic parmesan pork chops with pine nuts

This is my own variation of Mr. Food's recipe. I've always liked my pork chops cooked a bit longer than most chefs do, and I've always had excellent results doing it my way. So here is my version with a few tweaks!

Ingredients

  • 4 - 1/2-inch thick boneless pork chops
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups all purpose flour
  • 1 tablespoon italian seasoning
  • 2 - eggs
  • 1 cup grated parmesan cheese, divided
  • 1 cup panko bread crumbs
  • 1/4 cup butter, divided
  • 1 clove garlic, minced
  • 3/4 cup heavy cream
  • 1/3 cup pine nuts (pignolias)

How To Make garlic parmesan pork chops with pine nuts

  • Step 1
    Sprinkle the pork chops evenly with salt and pepper.
  • Step 2
    Place flour in a small shallow bowl with Italian seasoning; mix together.
  • Step 3
    Break eggs into a second small shallow bowl and beat lightly.
  • Step 4
    In another bowl, mix together the panko bread crumbs and half the Parmesan cheese.
  • Step 5
    Dip both sides of each pork chop in first the flour, then the egg, and then the bread crumbs. Place chops on a sprayed, rimmed baking sheet.
  • Step 6
    Bake pork chops in a preheated 375-degree oven for 40-50 minutes, turning once halfway through baking time.
  • Sauteeing pine nuts and garlic in butter
    Step 7
    Melt 1 Tbsp. butter in a saucepan over medium-high heat; add garlic and saute for 2 to 3 minutes. Stir in cream and remaining Parmesan; reduce heat to low and simmer 3 to 4 minutes (DO NOT BOIL). Whisk in the remaining butter until melted.

    Serve the sauce over hot pork chops. May garnish with parsley.
