My great-grandmother originally came up with this recipe as a way of using up leftover ham. My grandmother was responsible for the modern version. You can make the loaf ahead of time, wrap tightly in plastic wrap, and store in refrigerator. Makes an ideal dinner party dish - tastes great with baked yams, biscuits and a big green salad with herb and garlic dressing.
Mix first five ingredients into a meatloaf, put in a 13 x 9 baking pan.
Combine glaze ingredients in a small saucepan, bring just to boiling.
Pour over loaf, put in preheated 325 degree oven.
Bake for 1 ½ hours, basting loaf with glaze every 10-15 minutes.
Serve with a mix of mayonnaise and horseradish, or just plain mayonnaise.
