gaga's ham loaf

My great-grandmother originally came up with this recipe as a way of using up leftover ham. My grandmother was responsible for the modern version. You can make the loaf ahead of time, wrap tightly in plastic wrap, and store in refrigerator. Makes an ideal dinner party dish - tastes great with baked yams, biscuits and a big green salad with herb and garlic dressing.

Ingredients
- 1 1/2 pounds ground round
- 2 cans spam, grated
- 2 cups whole wheat bread crumbs
- 1 - egg, beaten
- 1 cup milk
- 1/8 teaspoon each, salt and pepper
- GLAZE
- 3/4 cup apple cider vinegar
- 1 1/2 cups brown sugar, firmly packed
- 1/2 cup water
- 1 teaspoon mustard, yellow
How To Make gaga's ham loaf

Step 1Mix first five ingredients into a meatloaf, put in a 13 x 9 baking pan.

Step 2Combine glaze ingredients in a small saucepan, bring just to boiling.

Step 3Pour over loaf, put in preheated 325 degree oven.

Step 4Bake for 1 ½ hours, basting loaf with glaze every 10-15 minutes.

Step 5Serve with a mix of mayonnaise and horseradish, or just plain mayonnaise.
