Who doesn't like noodles? Pure comfort food. I was browsing Pinterest, and came across this recipe. OMG! I have to make this and wanted to share it with you. It is pancit noodles,(rice noodles) and vegetables. You can add pieces of beef, pork, chicken or shrimp. Yummmmmmm. This version has pork in it. Enjoy. Recipe:by Pinch of Yum.com

Ingredients
- 1 pound vermicelli noodles
- 1 pound pancit noodles
- 4 cups sliced mixed veggies: cabbage, carrots, bell peppers, and scallions
- 1 pound lean pork; cut into very small pieces
- 1/2 cup oil
- 1 - onion, minced
- 1 tablespoon soy sauce
- 6 cloves garlic, crushed
- 1 - pork bouillion cube
- 6 cups water
- NOTE: I CAN'T FIND PORK BOUILLION. I WILL USE CHICKEN OR VEGETABLE. ALSO, YOU MAY NEED A LITTLE MORE SOY SAUCE. USE HOW MUCH YOU PREFER UP TO 1/4 CUP

Step 1Soak the vermicelli noodles in water for 5 minutes, or until soft.

Step 2Brown the pork in oil with the soy sauce, garlic and onion.

Step 3Add the 6 cups water and bouillion cube to the pork and bring to a low simmer. Add the vegetables and cook for 5-10 minutes. Add the uncooked pancit noodles and the soaked vermicelli noodles. Simmer over low heat until the noodles soak up all the broth.
