All those tins of mushy ham spread need to step aside, because there is a new sheriff in town. This is a dish that I will be serving up at my holiday open houses, and it is not just for the holidays… This stuff rocks any time of the year. The spices are designed to complement the ham and work in anything from a sandwich to a salad. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • FOR THE FOOD PROCESSOR
  • 1 1/2 pounds ham, roughly chopped
  • 4 - 5 medium green olives, pitted
  • THE BINDING INGREDIENTS
  • 1/3 cup plain mayonnaise, i prefer duke’s
  • 2 ounces parmesan cheese, finely grated
  • 2 ounces crushed pineapple, drained, blotted with paper towel
  • 1 - 2 tablespoons sweet pickle relish, drained, blotted with paper towel
  • 1 tablespoon brown mustard, i prefer grey poupon
  • 2 teaspoons hot sauce, i prefer frank’s
  • 1 teaspoon worcestershire sauce, more on this later
  • 1 teaspoon white vinegar
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon white pepper, freshly ground

    PREP/PREPARE
  • Step 2
    To make this recipe, you will need a food processor fitted with an S-blade, or a good blender.
  • Step 3

    Gather your ingredients (mise en place).
  • Step 5
    Roughly chop the ham.
  • Step 6
    Toss the ham and a few olives into a food processor, or blender.
  • Step 7
    Use 1-second pulses until finely chopped.
  • Step 8
    Add all the binding ingredients in a bowl.
  • Step 9
    Mix until thoroughly combined.
  • Step 10
    Add to ham and mix to combine.
  • Step 11
    If you have the time, cover, and let sit in the refrigerator for a few hours, or overnight. This will help the flavors blend together.
