easy saucy pork chops and veggies

If you cook this right, the meat just comes apart so easily. My husband said it was the moistest pork he's ever had. And the tomato based sauce w/ the veggies is awesome. I usually serve w/ a small amount of fettucine.

Ingredients

  • 1/4 cup olive oil, extra virgin
  • 2 - yellow summer squash, cut into 1" chunks
  • 1 - onion, cut into slices
  • 1 - zucchini, cut into 1" chunks
  • 4 - 1"-thick pork loin chops
  • 1/4 teaspoon each salt & pepper
  • 1/2 pound fresh mushrooms, quartered. i used shiitake for a meaty taste.
  • - 28 oz jar spaghetti sauce, i used prego light sauce.
  • 1 teaspoon dried oregano

How To Make easy saucy pork chops and veggies

  • Step 1
    In lg skillet, heat oil over med-high heat. Saute squash, onion and zucchini until tender, about 6 mins. Place in a bowl and set aside.
  • Step 2
    Season chops w/ salt and pepper. Brown in skillet 2 mins each side. Add veggies to skillet. Reduce heat to low and add mushrooms, spaghetti sauce and oregano.
  • Step 3
    Cover, cook 30 mins, or until chops are cooked through.
