1Mix the ground meat with the onion, crumbs, pickle juice, egg, salt and pepper til thoroughly combined.
2Prepare a loaf pan with food release spray. Shape the meat mixture and place in the loaf pan. Set aside.
3Combine the topping ingredients and pour the topping over the meatloaf.
4Bake at 350F one hour and fifteen minutes, basting often.
Remove from oven and let rest at least 10 minutes before serving.
If you like, double the sauce recipe so you can bake with half, and serve with half.
5NOTE: This would be great served with a nice baked mac and cheese, which could bake with the meatloaf, and a fresh green salad.
6* If you prefer, use all ground beef. Or you could try it with 2 lbs. of ground turkey.
