delicious disappearing caribbean spare ribs
My friend Cindy introduced me to this Caribbean rib recipe that her father-in-law from Puerto Rico always used for the grill. It was his version of BBQ spare ribs or short ribs, and yes they do disappear quickly. You just cant seem to get enough of them. What a wonderful fusion of flavor!

Ingredients
- 1 - slab of spare ribs, short ribs or both (cut down to individual ribs
- 1 gallon mojo citrus marinade
- 2 - 3 - oranges sliced thin
How To Make delicious disappearing caribbean spare ribs

Step 1In an enamel covered roasting pan arrange your ribs.

Step 2Pour Mojo into roasting pan to just cover the ribs. Top with sliced oranges and cover. Allow to set in refrigerator for about 3 to 4 hours.

Step 3Preheat oven to 350 degrees Put covered roasting pan in oven for 1 hour. after 30 minutes toss ribs around a bit and finish roasting in oven for another 15 min.

Step 4Set grill to medium flame. Take the entire pan of ribs out to your grill. Arrange the ribs on the grill constantly brushing with sauce from the pan as they brown. When ribs are browned nicely remove and serve! Yummm!!!
