- 8 ounces mojo marinade (homemade or store bought)
- 4 large garlic cloves, smashed
- 1/2 small onion, grated
- 3 tablespoons fresh cilantro, chopped
- 1 teaspoon thyme, dried
- 1 teaspoon oregano, dried
- 2 teaspoons cumin, ground
- 3 tablespoons fresh lime juice
- 1/4 cup evoo
- 1 teaspoon crushed red pepper
- 2 tablespoons brown sugar, light

Step 1Combine ingredients 2-14.

Step 2Add marinade to pork belly. Olace in zip lock bag. Marinate over night.

Step 3Smoke at 250 degrees for 6 hours. Baste with marinade and add additional wood chips as needed.
