This roast cooks better low and slow so start it in the crockpot early and you'll have a great meal at the end of the day. Don't forget to use the pan drippings after you have basted the meat.

Ingredients

  • 1 - 3.5 lb. boneless pork loin roast
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground allspice
  • 3 tablespoons oil
  • 1 jar 8-oz. jar apricot preserves (sugar free if you prefer)
  • 2 tablespoons dry sherry (not cooking wine)

How To Make crockpot pork roast w/ sherry-apricot basting sauc

  • Step 1
    Dry thoroughly the pork loin roast and place it in the crockpot.
  • Step 2
    Rub all herbs and dry ingredients over the roast and then drizzle the oil over the pork roast.
  • Step 3
    Cook 8 hours on Low heat only. During the last 30 minutes of cooking time, spoon over the apricot/sherry mixture. Serve the roasted pork with the pan drippings.
