Ingredients
- 1 - 3.5 lb. boneless pork loin roast
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground allspice
- 3 tablespoons oil
- 1 jar 8-oz. jar apricot preserves (sugar free if you prefer)
- 2 tablespoons dry sherry (not cooking wine)
How To Make crockpot pork roast w/ sherry-apricot basting sauc

Step 1Dry thoroughly the pork loin roast and place it in the crockpot.

Step 2Rub all herbs and dry ingredients over the roast and then drizzle the oil over the pork roast.

Step 3Cook 8 hours on Low heat only. During the last 30 minutes of cooking time, spoon over the apricot/sherry mixture. Serve the roasted pork with the pan drippings.
