Traditional Caprese combines the lush, fresh tastes of Capri which always include Mozzarella, Fresh Tomato, and Fresh Basil. Even though caprese points to goat mozzarella, true caprese uses buffalo mozzarella. Enjoy a classic with the addition of creamy mushrooms and spicy Italian sausage.

Ingredients
- 1 - batch of chunky italian countryside marinated vegetables, see recipe
- 3 cups homemade cream of mushroom soup (sub 1 can soup, 1 1/2c cream, 1c sliced mushrooms)
- 1/2 cup sour cream
- 5 - spicy italian sausage, boiled then sliced
- 1 cup shredded mozzarella
- 1/2 cup fresh basil leaves
- - fresh diced tomato, optional
- - parmesan cheese, optional
- 2 packages wacky pasta, boiled

Step 2In a saucepan, pour in your mushroom soup, fresh or canned. Heat it on medium high. Then add in your batch of marinated vegetables.

Step 3Mix in sour cream and mozzarella. Stir until melted and blended in.

Step 4Add basil and sausage. Reduce heat to medium low. Cook covered for 30 minutes, stirring occasionally.

Step 5Boil pasta. I like to use Wacky Pasta Veggie Shapes.

Step 6Serve pasta on a plate with two ladles of sauce. Optionally sprinkle Parmesan and diced tomatoes atop.
