cooking under pressure: awesome bbq pork
Made this up for Sunday brunch; along with some yummy homemade BBQ sauce and coleslaw. You can slow cook this dish (about 6 hours), or you can fire up your pressure cooker/instant pot and have it ready in about 90 minutes. Up to you. Serve it with tacos, roll up into a taquito, open faced on a flour tortilla, or on a soft bun topped with coleslaw. Have fun with it. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 2 - 3 pounds pork shoulder, bone in or out
- 12 ounces beer, something light
- 2 tablespoons apple cider vinegar
- 2 tablespoons coconut sugar
- 1 teaspoon salt, kosher variety, fine grind
- 1 teaspoon white or black pepper, freshly ground
- 1 teaspoon dehydrated onions, ground to a powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ancho chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika, smoked variety
- 1 1/2 cups bbq sauce, homemade, or your favorite store bought

Step 2You will need a pressure cooker, or instant pot, to make this recipe.

Step 3I am using a pork shoulder for this recipe; however, you can experiment with other cuts of pork. I have used boneless pork chops, and pork tenderloin with equal success.

Step 4Unless you are feeding a bunch of folks, you will probably have leftovers. Understand that this recipe freezes very well. Use Ziploc bags, or a vacuum sealer, pop into the freezer, and it will last up to a year.

Step 5I made this with my homemade BBQ sauce, and coleslaw. Step 6Gather your ingredients (mise en place).

Step 7Add the pork to the pressure cooker/instant pot.

Step 8You could sear the pork in a bit of oil… I choose to skip that step.

Step 9Add the remaining ingredients, except the BBQ sauce, into a bowl, or measuring cup, and whisk to combine.

Step 10Pour over the pork.

Step 11Set the pressure cooker/instant pot to high, and cook for 1 hour, then let sit, without opening, for 20 minutes (natural release).

Step 12Remove pork, shred, then place back into the pot, pour in the BBQ sauce, and mix to combine.

Step 13There will be a lot of liquid in the the pressure cooker/instant pot. I usually drain all that out into a bowl before adding the shredded pork. Then, I add the BBQ sauce, and add a few tablespoons of the liquid to thin it out a bit. But that depends entirely on the type of BBQ sauce you are using, and if you want it to be thick or thin.
