I remember my dad used to make a ham w/ cranberries and juices and spices but couldn't remember the exact ingredients so I played around w/ them and , thankfully, lol, this Christmas every single person ate almost every thing from the pan. Leaving very little behind...so, so good!

prep time 40 Min
cook time 2 Hr 10 Min
method Bake
yield 20 serving(s)

Ingredients

  • 10 pounds spiral sliced ham, bone-in
  • 3 cups fresh cranberries or frozen and thawed
  • 4 tablespoons honey, preferably clove honey
  • 1/3 cup orange juice, i used tropicana
  • 2-1/2 tablespoon orange zest
  • 1/4 teaspoon crushed cloves
  • 1/2 cup packed, light brown sugar
  • 1 can pineapple slices, (optional)
  • 1-1/2 teaspoon ground cinnamon

How To Make christmas ham w/ fresh cranberry-orange glaze

  • Step 1
Heat oven to 275.Place ham, flat side down in roasting pan. Cover lightly w/ foil and bake 1-1/2 hours.
  • Step 2
In medium sized pot, over medium heat, combine cranberries, honey, orange juice, orange zest, cloves and cinnamon. Cook on medium, stirring occasionally until cranberries start to sound like they're "popping."
  • Step 3
Cover pot, remove from heat and let cool. Remove ham from oven. Increase oven heat to 425. Make sure glaze is cool enough to handle w/ hands, ( this is the easiest way to do this, ) using your hands, spread the glaze all over the ham, including top and sides. If using the pineapple slices, place them on top of ham. Sprinkle the brown sugar all over ham. Place ham back in oven and cook, uncovered for another 15-20 minutes or until the brown sugar has melted and formed a nice crust. Take the ham out of oven and let sit for 10 minutes.
