Ingredients
- 2 1/2 pounds pork shoulder roast
- 1 1/2 tablespoons olive oil
- 8 ounces tomato sauce
- 1/2 cup water
- 1 small yellow onion (thinly sliced)
- 3 - canned chipotle peppers in adobo sauce (chopped with seeds)
- 4 cloves garlic (minced)
- 2 teaspoons ground cumin
- 1/ teaspoon ground coriander
How To Make chipotle shredded pork

Step 1Trim fat, season with salt and pepper. Heat pan with olive oil and brown all sides of meat. Place browned meat in a slow cooker. Combine tomato sauce, water, onion, chipotle peppers, garlic, cumin and coriander. Pour over roast. Cook on high for 5 hours or low for 8-10.

Step 2Remove pork shoulder from slow cooker, set aside. Strain and reserve cooking liquid. Using forks shred pork. Stir reserved cooking liquid to shredded pork.
