Ingredients

  • 2 1/2 pounds pork shoulder roast
  • 1 1/2 tablespoons olive oil
  • 8 ounces tomato sauce
  • 1/2 cup water
  • 1 small yellow onion (thinly sliced)
  • 3 - canned chipotle peppers in adobo sauce (chopped with seeds)
  • 4 cloves garlic (minced)
  • 2 teaspoons ground cumin
  • 1/ teaspoon ground coriander

How To Make chipotle shredded pork

  • Step 1
    Trim fat, season with salt and pepper. Heat pan with olive oil and brown all sides of meat. Place browned meat in a slow cooker. Combine tomato sauce, water, onion, chipotle peppers, garlic, cumin and coriander. Pour over roast. Cook on high for 5 hours or low for 8-10.
  • Step 2
    Remove pork shoulder from slow cooker, set aside. Strain and reserve cooking liquid. Using forks shred pork. Stir reserved cooking liquid to shredded pork.
