I have been wanting to do something with hominy for awhile now, so at work today while waiting for phone calls, I concocted this recipe. I think it will be very good. Please try it and tell me what you think!

  • 2 can(s)
    (15.5 oz. ea.) golden or white hominy
  • 6 slice
    bacon, cooked and crumbled
  • 1 large
    shallot, sliced
  • 1 clove
    garlic, minced
  • 4 Tbsp
    (1/2 stick) butter
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 4 Tbsp
    all purpose flour
  • 1 c
    half and half - or -
  • 1 can(s)
    (12 oz.) evaporated milk
  • 1 1/2 c
    shredded cheddar cheese, divided

How to Make CHEESY BACON AND HOMINY CASSEROLE

Step-by-Step

  1. Drain and rinse hominy; set aside.
  2. Cook bacon and crumble; set aside.
  3. Peel and slice shallots. Peel and mince garlic.
  4. In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.
  5. Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.
  6. Blend in 1 cup of the cheese and stir until melted.
  7. Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.
  8. Remove cover and sprinkle on the crumbled bacon, followed by 1/2 cup cheese.
  9. Continue baking, uncovered, for 15 minutes or until cheese is melted. Serve immediately.
