cheesy bacon and hominy casserole
I have been wanting to do something with hominy for awhile now, so at work today while waiting for phone calls, I concocted this recipe. I think it will be very good. Please try it and tell me what you think!

Ingredients
- 2 cans (15.5 oz. ea.) golden or white hominy
- 6 slices bacon, cooked and crumbled
- 1 large shallot, sliced
- 1 clove garlic, minced
- 4 tablespoons (1/2 stick) butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 tablespoons all purpose flour
- 1 cup half and half - or -
- 1 can (12 oz.) evaporated milk
- 1 1/2 cups shredded cheddar cheese, divided
How To Make cheesy bacon and hominy casserole

Step 1Drain and rinse hominy; set aside.

Step 2Cook bacon and crumble; set aside.

Step 3Peel and slice shallots. Peel and mince garlic.

Step 4In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.

Step 5Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.

Step 6Blend in 1 cup of the cheese and stir until melted.

Step 7Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.

Step 8Remove cover and sprinkle on the crumbled bacon, followed by 1/2 cup cheese.

Step 9Continue baking, uncovered, for 15 minutes or until cheese is melted. Serve immediately.
