Marshmallow Meatloaf you say!!! Well I say yes! This is a favorite camping recipe and it is over 100 years old... just updated by using mini marshmallows... This is actually a very tasty meatloaf! You can also make meatballs with this recipe... it is always a conversation piece! I dedicate this to my cousin's husband Ron... my favorite Marshmallowed Meatball!!! Play With Your Food! xo .

Ingredients

  • 1 pound ground pork
  • 3 pounds ground beef
  • 2 large carrots (grated fine)
  • 5 large potatoes with jackets (cut in small 1/4 inch cubes)
  • 3 large onions (minced)
  • 70 - mini marshmallows (cut or broken in half)
  • 1 tablespoon tabasco sauce
  • 1 tablespoon yellow mustard
  • 1 cup catsup
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 2 teaspoons ground black pepper
  • 2 large eggs, beaten

How To Make campfire marshmallow meatloaf !

  • Step 1
    While at home: Mix meatloaf ingredients together very well. Put in zipper bags or airtight bowl. Set in cooler.
  • Step 2
    After you set up camp, and build your fire, Put the meatloaf into a Dutch oven and securely put the lid on it. Set the Dutch oven over a pile of hot coals (about 12-24). Place the same amount of hot coals on top of the Dutch oven's lid (12 - 24). Cook for about 25 minutes, check and see if it is done, if it is... remove it from the heat... if not... cook a bit longer (be careful not to burn it!)
  • Step 3
    *** This unusual recipe is very old, and has been adapted to modern times. You will be amazed at how good it is!!!
  • Step 4
    ****** You can make this at home in a 350 degree oven for 45 minutes or so... covered. 10 minutes uncovered.
  • For the meatballs, add barbeque sauce to the Dutch oven.
    Step 5
    *** When I was a girl, we made meatballs from this too... and I use to tease my cousin's husband and call him my little marshmallowed meatball !
  • Step 6
    *** Serve with baked, fried or mashed potatoes and corn on the cob!
