maga's best rubbed ribs
I am a big Alton Brown fan, and many years ago I took his suggestion to heart to make his rib recipe my own by changing up the ingredients to his spice rub and braising liquid recipe. My version has become a family favorite, and is often requested for birthday celebrations. I have also used the leftover passion fruit juice after making my Passion Fruit Cake, plus some apple cider, for a delicious flavor twist! UPDATE: I doubled the spice rub and baked four racks of ribs, splitting the braising liquid between the two bags. They were DELICIOUS!!

Ingredients
- INGREDIENTS
- 2 baby back pork ribs
- 1 box turkey cooking bags
- DRY RUB
- 5 tablespoons kosher salt
- 3/4 cup light brown sugar, firmly packed
- 1 teaspoon dry mustard
- 2 teaspoons tony's cajun seasoning
- 1/2 teaspoon old bay seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon white pepper
- 1 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/8 teaspoon allspice, ground
- 1/2 teaspoon ginger powder
- 1 bottle barbecue sauce
- BRAISING LIQUID
- 1 cup apple cider
- 1/4 cup passion fruit juice/apple cider
- 1 clove garlic
- 1 tablespoon worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
How To Make maga's best rubbed ribs

Step 1Place the dry rub ingredients in a bowl and thoroughly combine.

Step 2Place a rack of ribs on a cutting board/cookie sheet and generously rub with spice mixture.

Step 3Place a cooking bag on top of a 15X13 inch rimmed baking sheet. Insert two slabs into the bag, following cooking bag instructions.

Step 4Refrigerate ribs for at least an hour, up to overnight.

Step 5Preheat oven to 350 degrees.

Step 6Combine braising liquid in a microwave safe container, and microwave on high for one minute. Stir to combine.

Step 7Distribute liquid equally into bag(s), closing with seal and piercing as per cooking bag instructions.

Step 8Place ribs in oven, and Immediately Reduce temperature to 250 degrees. Cook for 2 1/2 hours, or until rib meat is tender.

Step 9Remove ribs from oven, discard braising liquid. Cut ribs into two to three piece sections, and place on a broiling rack. Coat with your favorite barbeque sauce. broil or grill until carmelized.
