Pork tenderloin is so easy to make and this spice mix on the meat a wonderful earthy flavor. The aioli is a great dipping sauce. This pork can be grilled if you prefer.

Ingredients
- FOR THE PORK:
- 2 pounds pork tenderloins (2 1-pound tenderloins)
- 1 1/2 tablespoons ground cumin
- 3/4 teaspoon kosher salt
- 1 tablespoon chili powder
- 1/4 teaspoon ground black pepper
- FOR THE AIOLI:
- 1 cup regular mayonnaise or your choice
- 4 teaspoons ground cumin (or to taste)
- 2 teaspoons lime juice
- 3 tablespoons fresh cilantro, chopped
How To Make baked pork tenderloins w/ cumin/lime aioli

Step 1Mix together the spice rub for the pork tenderloins and rub them well with the mix.

Step 2Roast tenderloins in a preheated 350 degree oven in a roasting pan. Place pan on center rack of oven and bake until pork reaches 160 degrees - remove and allow to rest for 10 minutes.

Step 3In a skillet, add cumin and cook over medium heat - stirring constantly until slightly darker in color. Remove pan from heat and combine with mayo, lime juice and cilantro. Serve as a dipping sauce for the pork.
