autumn essentials: pork, apples, and cranberries
This is a wonderful dish that is rich in the flavors of Autumn. I tried it with three different types of pork… chops, tenderloin, and roast. In terms of flavor and texture, the boneless pork roast won out. As to the flavors of Autumn, I used fresh cranberries and apples… what could be more Autumn than cranberries and apples. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- THE PORK
- 2 pounds boneless pork roast
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
- 2 tablespoons fresh clover honey
- THE CRANBERRY/APPLE SAUCE
- 4 cups fresh cranberries, rinsed
- 1 cup tart cherry juice
- 1 cup coconut sugar
- 1/2 teaspoon black pepper, freshly ground
- 1/4 cup bourbon (optional)
- 2 medium apples, peeled, cored, and cut into wedges

Step 2You will need a slow cooker, or Instant Pot to make this recipe.

Step 3Gather your ingredients (mise en place).

Step 4Rub the pork roast with some salt and pepper, then let rest while making the cranberry/apple sauce.

Step 5THE CRANBERRY/APPLE SAUCE

Step 6Place the ingredients; except the bourbon and apples, into a saucepan over medium-high heat. Boil until the cranberries begin to burst, about 3 – 4 minutes. Add the bourbon (if using) and reduce to a simmer. Stir, and break up the cranberries with the back of your spoon. Simmer for an additional 8 – 10 minutes.

Step 7Add the cranberries to the bowl of your slow cooker/instant pot, then mix in the apples.

Step 8Nestle the pork roast in the middle.

Step 9Pour the honey over the roast.

Step 10Set the cooker to low and slow cook for about 7 hours.

Step 11Allow to rest for about 10 minutes, and then slice.

Step 13Serve the pork with some of the apples and cranberry sauce; along with your favorite sides. Enjoy.
