autumn essentials: pork, apples, and cranberries

This is a wonderful dish that is rich in the flavors of Autumn. I tried it with three different types of pork… chops, tenderloin, and roast. In terms of flavor and texture, the boneless pork roast won out. As to the flavors of Autumn, I used fresh cranberries and apples… what could be more Autumn than cranberries and apples. So, you ready… Let’s get into the kitchen.

Ingredients For autumn essentials: pork, apples, and cranberries

  • PLAN/PURCHASE
  • THE PORK
  • 2 lb
    boneless pork roast
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • 2 Tbsp
    fresh clover honey
  • THE CRANBERRY/APPLE SAUCE
  • 4 c
    fresh cranberries, rinsed
  • 1 c
    tart cherry juice
  • 1 c
    coconut sugar
  • 1/2 tsp
    black pepper, freshly ground
  • 1/4 c
    bourbon (optional)
  • 2 md
    apples, peeled, cored, and cut into wedges

How To Make autumn essentials: pork, apples, and cranberries

    PREP/PREPARE

    You will need a slow cooker, or Instant Pot to make this recipe.

    Gather your ingredients (mise en place).
  • 4
    Rub the pork roast with some salt and pepper, then let rest while making the cranberry/apple sauce.

    THE CRANBERRY/APPLE SAUCE

    Place the ingredients; except the bourbon and apples, into a saucepan over medium-high heat. Boil until the cranberries begin to burst, about 3 – 4 minutes. Add the bourbon (if using) and reduce to a simmer. Stir, and break up the cranberries with the back of your spoon. Simmer for an additional 8 – 10 minutes.

    Add the cranberries to the bowl of your slow cooker/instant pot, then mix in the apples.

    Nestle the pork roast in the middle.

    Pour the honey over the roast.

    Set the cooker to low and slow cook for about 7 hours.

    Allow to rest for about 10 minutes, and then slice.
