For the hard cider, I use Angry Orchard Green Apple but a dry cider would work also. This is a delicious, hearty, and very versatile stew that can be served in a variety of ways. #1: Spoon over cooked macaroni noodles. #2: Or go gluten free and serve over steamed white or brown rice. #3: If you're Paleo, try it over buttery mashed potatoes. #4: Or for a keto option you can spoon it over kale that's been shredded and sauteed or Brussel's Sprouts that have been halved and roasted. Ingredients

  • PREP
  • 3 pounds pork roast (any kind) cut into bite-sized cubes
  • 1 pound pork kielbasa or smoked sausage sliced
  • 2 tablespoons corn starch mixed into 1/2 cup cold water
  • 1 large white onion chopped
  • 1 pound baby carrots cut in half
  • 2 cups baby button or bella mushrooms (optional) cut in half
  • COMBINE
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 teaspoons celery salt
  • 2 teaspoons marjoram
  • 2 teaspoons dried parsley
  • 12 ounces hard apple cider
  • 2 cups beef or chicken stock
  • 16 ounces heavy whipping cream
  • OTHER
  • 2 tablespoons coconut oil
  • 1 1/2 pounds bacon end and pieces
  • 2 tablespoons minced garlic

How To Make aunt squishy's three lil' pig stew

  • Step 1
    Mise en place (prepare) the pork roast, kielbasa, onion, carrots, and mushrooms as indicated beside each in the ingredients list and mince the garlic if using fresh.
  • Step 2
    In a very large skillet, heat coconut oil until smoking slightly. Add cubed pork roast and garlic and toss until pork is browned on all sides. If it looks to be too much for your skillet to handle, divide oil, pork, and garlic into two batches and cook separately.
  • Step 3
    Combine browned pork (including garlic), kielbasa, carrots, onion, and mushrooms along with all ingredients under the "Combine" heading of the ingredients list in a very large crock pot and set to low heat for 6 hours, stirring once or twice.
  • Step 4
    20 Minutes before your crockpot timer ends, cook the bacon ends and pieces in a large skillet until slightly crispy.
  • Step 5
    Remove bacon from the pan but do not strain or toss the bacon grease. Chop the bacon ends and pieces into smaller bite-sized pieces as needed and return to the skillet with the bacon grease.
  • Step 6
    Add cooked bacon and bacon grease to the crockpot and stir thoroughly.
