This also is a recipe I got from my dad. He was an excellent cook. In fact he was a chef in the Navy, so a lot of my recipes come from him. I may tweak them from time to time, but they stay true to the original recipe as much as possible.

Ingredients
- 2/3 cup apricot preserves, preferably low sugar or sugar free
- 3 tablespoons light teriyaki sauce
- 2 tablespoons dijon mustard
- 1 teaspoon ground ginger
- 1 tablespoon canola oil
- 4 - boneless loin pork chops
- 1/8 teaspoon salt & pepper.
- 1/2 pound fresh snow peas
- 1/2 pound uncooked angel hair pasta
- 2 - scallions, sliced diagonally.
- 1 tablespoon toasted sesame seeds.
How To Make apricot pork w/ snow peas.

Step 1In bowl, stir together preserves, teriyaki sauce, mustard and ginger. Heat oil in lg skillet over med-high heat. Season chops w/ salt & pepper. Add chops to skillet and cook until browned and no longer pink inside. Cook pasta as directed, adding snow peas the last 5 min of cooking, drain. Place pasta and snow peas in lg serving bowl. Set aside 1/4 cup apricot sauce. Toss remaining apricot sauce w/ pasta mix. Garnish w/ scallions & sesame seeds. Serve w/ extra apricot sauce.
