pizza essentials: sausage ball pizza on flatbread
I threw together this pizza yesterday. I made some flatbread, and topped it with items on hand. It came out pretty dang good… I am woefully deficient in photos for this recipe; however, all I can say is that I was preoccupied while making it. Anyway, I think that you will get the idea. The large balls of sausage are reminiscent of how my Aunt Josephine used to make her pies. And the light application of sauce, and the thickly-sliced tomatoes give it several levels of flavors. Your taste buds get a workout on this recipe. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 6 ounces italian sausage, mild or hot, your choice
- 6 - 8 slices pepperoni
- 1 large flatbread, fresh or store-bought, your choice
- 1 tablespoon olive oil, extra virgin
- 2 ounces pizza sauce, your choice
- 1 medium garden fresh tomato, thickly sliced and quartered
- 4 ounces mozzarella, freshly grated
- 2 ounces parmesan cheese, freshly grated
- ADDITIONAL ITEMS
- - any toppings you can think to throw on it

Step 1PREP/PREPARE

Step 2I made my own Italian sausage, flatbread, and pizza sauce for this recipe; however, if you do not wish to go to all the trouble, just pick your favorite store-bought equivalents and go for it.

Step 3If you are making your own flatbread, bake it until nice and brown, and then allow to cool.

Step 4Gather your Ingredients (mise en place).

Step 5Place a rack in the middle position, and preheat the oven to 450f (230c).

Step 6Take the sausage, roll it into 6 – 8 balls, place in a small pan, and slowly cook until the sausage is cooked through.

Step 7Chef’s Tip: I usually put the heat to medium-low, cover the pan, and let them sit for 10 – 12 minutes.

Step 8Take the flatbread, brush with the olive oil, then brush with the pizza sauce, and finally add the sliced tomatoes.

Step 9Add the sausage and pepperoni.

Step 10Cover with the two cheeses, place on a parchment-lined baking sheet, and bake until the cheese is bubbly, and beginning to brown in spots, about 10 – 12 minutes.
