Why does a pizza have to be thin and flat… why not make one in a galette, and while we’re at it, let’s stuff it with all kinds of goodies. The fillings can be anything thing that you enjoy on a normal pizza. So, you ready… Let’s get into the kitchen

Ingredients
- PLAN/PURCHASE
- 1 - pizza dough recipe
- 6 ounces italian sausage
- 4 slices canadian bacon
- 4 ounces pizza sauce, or to taste
- 3 ounces olive oil, extra virgin
- 3 slices provolone cheese
- 2 tablespoons parmesan cheese, freshly grated
- 3 ounces mozzarella cheese, freshly shredded
- 10 - 12 slices pepperoni

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Add the Italian sausage to a sauté pan over medium heat.

Step 4Sauté until cooked through, about 6 – 8 minutes.

Step 5Chef’s Note: Use a wooden spoon to break the sausage into small bits.

Step 6Remove and drain on paper towels.

Step 7Place a rack in the middle position, and preheat the oven to 425f (220c).

Step 8Place your pizza dough on a clean, flat surface and roll out into an 8-inch circle.

Step 9Spread the tomato sauce in a 6-inch circle.

Step 10Add the sausage.

Step 11Add the provolone cheese.

Step 12Add the Canadian bacon.

Step 13Add the parmesan cheese

Step 14Add the mozzarella cheese.

Step 15Add the pepperoni.

Step 16Slice the excess pizza dough about every two inches.

Step 17Fold the dough over the filling.

Step 18Brush with a bit of olive oil, and sprinkle with some oregano.

Step 19Place into the preheated oven, and bake until the crust browns, and the cheese is nice and bubbly, about 12 – 18 minutes.

Step 21Slice and serve while still nice and warm. Enjoy.
