This is a great way to get your kids/grandkids involved in assembling the toppings Feel free to use topping of your choice. The dough makes enough for 4 ftiras - if not used you can refrigerate another day.

Ingredients

  • DOUGH
  • 4 cups bread flour
  • 3 teaspoons yeast
  • 2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • 6 tablespoons olive oil
  • 1 1/3 cups warm water
  • FTIRA TOPPINGS (FOR TWO FTIRAS)
  • 1 jar olive paste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red bell pepper, thinlysliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese
  • 1/2 cup fresh arugala/spinach combination

How To Make ftira - my way!

  • Step 1
    For the dough, combine all dry ingredients (including yeast) in a bowl and mix well. Mix together the olive oil and warm water. Add slowly to the dry ingredients until the mixture comes together as a dough.
  • Step 2
    Place in a bowl and allow to rise in a warm place for 3 hours. Once the dough has risen for 3 hours, cover with plastic wrap and refrigerate overnight. When ready to use, separate the dough into 4 pieces and roll the dough out. Place the dough on a sprinkling of corn meal or semolina flour.
  • Step 3
    Add a little olive oil to the top of the ftira and then add your toppings. Sprinkle a little olive oil on top of the finished product and bake at 400 degrees for 10-15 minutes.
