You can make a quesadilla out of just about any ingredients that you wish. The choices are yours and they are endless. Quesadillas are one of my favorite things to whip up when I’m craving something; but I’m not exactly sure what I want. One of my other favorite foods is pizza; so why not combine them together into one yummy recipe. And not just any old pizza quesadilla, but a DOUBLE one, with pizza in the middle and pizza on the top. And one more thing… The sauce goes on the side, not in the quesadilla. I want it crispy; not soggy. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 ounces italian sausage, ground
  • 1 tablespoon sweet butter, unsalted, melted
  • 2 medium flour tortillas, about 8 inches (20cm) in diameter
  • 3 - 4 slices provolone cheese, thinly sliced
  • 4 ounces mozzarella cheese, shredded
  • 5 - 6 medium black or green, your choice
  • 6 - 8 - pepperoni, thinly sliced
  • ADDITIONAL ITEMS
  • - parmesan cheese, for topping
  • - pizza sauce, your choice, for dipping
  • OPTIONAL TOPPINGS
  • - sautéed onions
  • - sautéed peppers
  • - sautéed mushrooms
  • - diced tomatoes
  • - the possibilities are endless

How To Make appetizing essentials double down pizza quesadilla

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Cook the Italian sausage until beginning to brown, then drain on paper towels, and reserve.
  • Step 4
    Brush some butter on one side of each of the flour tortillas.
  • Step 5
    Chef’s Tip: I’m not making these on huge-sized tortillas, I prefer to make them a bit smaller, so that they are easier to handle. But, you know what they say: Go Big or Go Home :-)
  • Step 6
    Place a rack in the upper position, and preheat the oven to 420f (215c).
  • Step 7
    Add one of the flour tortillas to the pan you cooked the Italian sausage in (butter-side-down), and turn the heat up to medium.
  • Step 8
    Chef’s Note: The pan needs to be ovenproof.
  • Step 9
    While the tortilla is cooking, add the provolone.
  • Step 10
    Add the Italian sausage, and the olives.
  • Step 11
    Add the mozzarella.
  • Step 12
    Finally, top with the other flour tortilla, butter-side-up, and press down.
  • Step 13
    Flip the quesadilla over several times, about a minute per side, until both sides, are golden brown, and the cheese is melty.
  • Step 14
    Top with additional mozzarella, and pepperoni slices.
  • Step 15
    Place the pan into the preheated oven, and bake until the cheese is bubbly, and beginning to brown, about 6 – 8 minutes.
  • Step 16
    Remove from the oven, and allow to rest for 3 minutes, before slicing into wedges.

    PLATE/PRESENT
  • Step 18
    Sprinkle with some Parmesan cheese, and serve with your favorite, warmed up, pizza sauce. Enjoy.
  • Step 19
    Keep the faith, and keep cooking.
