Ingredients
- SAUCE:
- 1 cup flat-leaf parsley
- 3 cloves garlic
- 1 1/2 tablespoons freshly squeezed lemon juice
- 1 1/2 teaspoons fresh oregano
- 1/4 teaspoon crushed red pepper (optional)
- 1/4 teaspoon kosher salt
- black pepper, to taste
- 1/4 cup extra-virgin olive oil
- NOODLES:
- 2 ounces spaghetti
- 4 cups zucchini noodles (2 small zucchini)
- 1/2 pound cooked shrimp, peeled
- 2 tablespoons feta cheese, crumbled

Step 1Place all the sauce ingredients except oil in a small blender jar. Blend until smooth. Add the oil, blend until smooth. Divide the sauce between two small lidded containers. Set aside.

Step 2Cook the spaghetti in boiling water until al dente. Rinse twice under cold running water. Drain well and place in a bowl. Add the zucchini noodles and gently toss to combine.

Step 3Divide the noodles between two lidded containers. Top with the shrimp (can sub tofu or a single serve chicken packet - see note). Sprinkle the crumbled feta over the top.

Step 4Refrigerate both the sauce and noodle containers. When ready to eat lunch, shake the sauce and pour over the noodles right before eating.
