This is a delicious and healthy option to take to work or play. If you don't have a refrigerator available while you're out and about, use tofu. Or, try subbing the Starkist Chicken Creations - Lemon Pepper flavored single serve chicken packets.

Ingredients

  • SAUCE:
  • 1 cup flat-leaf parsley
  • 3 cloves garlic
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 1 1/2 teaspoons fresh oregano
  • 1/4 teaspoon crushed red pepper (optional)
  • 1/4 teaspoon kosher salt
  • black pepper, to taste
  • 1/4 cup extra-virgin olive oil
  • NOODLES:
  • 2 ounces spaghetti
  • 4 cups zucchini noodles (2 small zucchini)
  • 1/2 pound cooked shrimp, peeled
  • 2 tablespoons feta cheese, crumbled

How To Make zoodles & chimi

  • Step 1
    Place all the sauce ingredients except oil in a small blender jar. Blend until smooth. Add the oil, blend until smooth. Divide the sauce between two small lidded containers. Set aside.
  • Step 2
    Cook the spaghetti in boiling water until al dente. Rinse twice under cold running water. Drain well and place in a bowl. Add the zucchini noodles and gently toss to combine.
  • Step 3
    Divide the noodles between two lidded containers. Top with the shrimp (can sub tofu or a single serve chicken packet - see note). Sprinkle the crumbled feta over the top.
  • Step 4
    Refrigerate both the sauce and noodle containers. When ready to eat lunch, shake the sauce and pour over the noodles right before eating.
