Ingredients

  • 1 package (16 oz.) spaghetti (or whatever pasta you prefer)
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1 teaspoon garlic powder (or 2 cloves minced garlic)
  • 3 tablespoons canola oil
  • 1 jar (26 oz.) meatless spaghetti sauce
  • 1 can (15 oz.) garbanzo beans or chickpeas, rinsed and drained
  • 1 can (14.5 oz.) diced tomatoes with garlic and onion, undrained
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1 - bay leaf
  • 1/4 cup grated parmesan cheese

How To Make vegetarian spaghetti

  • Step 1
    Cook the spaghetti or pasta according to package directions. Meanwhile, in a large skillet, saute the onion, celery and garlic powder (or minced garlic) in oil until tender.
  • Step 2
    Add spaghetti sauce, beans, tomatoes, sugar, salt, oregano and bay leaf.
  • Step 3
    Bring to a boil; cover and simmer for 10 minutes. Discard bay leaf.
  • Step 4
    Drain spaghetti; top with sauce and cheese.
