This dish is a great way to get your protein without meat. A very satisfying meal with a little salad and some bread. I think this is a winner!

(16 oz.) spaghetti (or whatever pasta you prefer)
1 c
chopped onion
1/2 c
chopped celery
1 tsp
garlic powder (or 2 cloves minced garlic)
3 Tbsp
canola oil
1 jar(s)
(26 oz.) meatless spaghetti sauce
1 can(s)
(15 oz.) garbanzo beans or chickpeas, rinsed and drained
1 can(s)
(14.5 oz.) diced tomatoes with garlic and onion, undrained
1 tsp
sugar
1/2 tsp
salt
1/2 tsp
dried oregano
1
bay leaf
1/4 c
grated parmesan cheese

How to Make VEGETARIAN SPAGHETTI

Step-by-Step

  • 1Cook the spaghetti or pasta according to package directions. Meanwhile, in a large skillet, saute the onion, celery and garlic powder (or minced garlic) in oil until tender.
  • 2Add spaghetti sauce, beans, tomatoes, sugar, salt, oregano and bay leaf.
  • 3Bring to a boil; cover and simmer for 10 minutes. Discard bay leaf.
  • 4Drain spaghetti; top with sauce and cheese.
