tortellini salad

I got this recipe from a co-worker and made it for the first time today. It is like eating candy!

Ingredients

  • 1 bunch broccoli, fresh cut into bite size pieces
  • 1/4 cup golden raisins
  • 1/4 cup craisins
  • 1/2 - red onion, chopped
  • 1 package refrigerator tortellini
  • 2 tablespoons granulated sugar
  • 2 tablespoons apple cider vinegar
  • 1 cup mayonnaise
  • 1 pound bacon (or use bacon bits)
  • 1/2 cup sunflower seeds

How To Make tortellini salad

  • Step 1
    Cook bacon until crisp. Drain, crumble and set aside.
  • Step 2
    Cook tortellini as directed on package.
  • Step 3
    Blanch broccoli in boiling water just until the color starts to turn and immediately remove from heat and run under cold water.
  • Step 4
    In a salad bowl, toss together broccoli, tortellini, raisins, craisins and red onions.
  • Step 5
    In a small bowl, whisk together the sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.
  • Step 6
    Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.
