This all fresh healthy recipe I discovered when I sauted' garlic & vine tomatos and portabella mushroom in a skillet w/EVOO, and salt/pepper then adding some black olives, basil and shrimp & cooked until shrimp were pink. I boiled angel hair added the fresh tomato mixture over the angel hair and topped with shredded basil and asiago cheese. My mother and I enjoy this and my daughter repeats this recipe in North Carolina where she lives. My 90 year Italian Grandma approves of the all fresh ingredients I used.

Ingredients

  • 5 medium vine tomatoes
  • 2 large portabella mushrooms
  • 5 pounds garlic
  • 1 can black olives
  • 1 pound fresh medium shrimp peeled

How To Make tomato-protabella-shrimp pasta

  • Step 1
    Boil Water for Angel Hair and add pinch of salt (the site doesn't allow me to post KEY words -Tomato Portabella and complete the INGREDIENT list -Basil s/p, asiago cheese).
  • Step 2
    In skillet, Add sliced garlic, saute', then add Tomatoes wedged Cut in half and all the juice, saute', then add S/P, Portabella mushrooms chopped, black olives sliced, a little fresh basil. Last, add the shrimp and cooked covered for 9 minutes or until shrimp are pink.
  • Step 3
    Drain the Angel Hair and Serve the Tomatoe mixture over the angel hair and top with shredded basil and asiago cheese.
