Tortellini Soup is a really quick and easy dinner on a cold night.Use whatever type of tortellini you like beef, sausage, chicken or cheese. Garnish with Fresh Parmesan Cheese and Crusty Italian Bread or Garlic Bread.

Ingredients

  • 4 clove
    garlic, minced
  • 2 box
    (32 1/2 oz.) box or can of chicken broth
  • 1 Tbsp
    olive oil
  • 2 pkg
    (19 oz.) frozen tortellini (beef, sausage, chicken or cheese)
  • 2 can(s)
    (14 1/2 oz.) tomatoes
  • 1/4 c
    fresh chopped parsley
  • 2 Tbsp
    fresh chopped basil
  • 1 pkg
    frozen chopped spinach
  • 1 pkg
    grated, fresh parmesan

How to Make Super Quick and Easy Tortellini Soup

Step-by-Step

  1. In a large saucepan over medium heat, cook garlic in olive oil for 2 minutes, add broth, tomatoes, herbs and tortellini.
  2. Heat to a boil; reduce heat; simmer 10 minutes. Add spinach and simmer 5 minutes more. Serve with parmesan cheese and crusty bread. Makes 6 servings.
