Ingredients
- 4 cloves garlic, minced
- 2 boxes (32 1/2 oz.) box or can of chicken broth
- 1 tablespoon olive oil
- 2 packages (19 oz.) frozen tortellini (beef, sausage, chicken or cheese)
- 2 cans (14 1/2 oz.) tomatoes
- 1/4 cup fresh chopped parsley
- 2 tablespoons fresh chopped basil
- 1 package frozen chopped spinach
- 1 package grated, fresh parmesan
How To Make super quick and easy tortellini soup

Step 1In a large saucepan over medium heat, cook garlic in olive oil for 2 minutes, add broth, tomatoes, herbs and tortellini.

Step 2Heat to a boil; reduce heat; simmer 10 minutes. Add spinach and simmer 5 minutes more. Serve with parmesan cheese and crusty bread. Makes 6 servings.
