- 8 ounces spaghetti
- 1/2 cup sun dried tomatoes (hydrated in olive oil)
- 2 cups spinach, fresh
- 1 tablespoon butter
- 1 tablespoon olive oil
- 4 - eggs
- 1 cup parmesan cheese
- - salt/pepper
How To Make sundried tomato/spinach pasta torte

Step 1Boil pasta al dente ( about 8 mins) drain

Step 2in a large saute pan..olive oil, butter,spinach,sun dried tomatoes...salt/pepper

Step 3combine with pasta...let cool ...meanwhile whisk eggs and parmesan cheese...in a oil sprayed baking dish...mix all together and press down ...bake at 350 30 mins...serve warm...with or without a drizzle of marinara sauce
