1 1/2 cdiced onion
3/4 cminced carrots
3/4 cminced celery
28 oz can(s)crushed or diced tomatoes
1 1/2 Tbspminced garlic
3 Tbspitalian seasoning
4 ozsun dried tomatoes
How to Make Sun Dried Tomato And Veggie Pasta Sauce
- Spray a large skillet or saucepan with nonstick cooking spray and then add broth and heat over medium. Add onions, celery and carrots and cook stirring frequently until the veg are softened.
- Add both kinds of tomatoes, garlic and Italian seasoning. Bring to a boil then reduce heat to low and simmer 45 minutes.
- Allow to cool slightly then puree in a food processor or blender. Serve over a thin pasta, like angel hair.
