sun dried tomato and veggie pasta sauce

Because of my blood pressure I rely on the garlic and Italian seasoning for the flavor but if you do want to add salt make sure to taste it first so it doesn't overwhelm the sun-dried tomato flavor. The carrots and celery give it a meaty mouthfeel so it's a good meal for when vegans and carnivores get together! I like this with whole wheat pasta.

Ingredients

  • 3 tablespoons broth
  • 1 1/2 cups diced onion
  • 3/4 cup minced carrots
  • 3/4 cup minced celery
  • 28 oz cans crushed or diced tomatoes
  • 1 1/2 tablespoons minced garlic
  • 3 tablespoons italian seasoning
  • 4 ounces sun dried tomatoes

How To Make sun dried tomato and veggie pasta sauce

  • Step 1
    Spray a large skillet or saucepan with nonstick cooking spray and then add broth and heat over medium. Add onions, celery and carrots and cook stirring frequently until the veg are softened.
  • Step 2
    Add both kinds of tomatoes, garlic and Italian seasoning. Bring to a boil then reduce heat to low and simmer 45 minutes.
  • Step 3
    Allow to cool slightly then puree in a food processor or blender. Serve over a thin pasta, like angel hair.
