sun dried tomato and veggie pasta sauce
Because of my blood pressure I rely on the garlic and Italian seasoning for the flavor but if you do want to add salt make sure to taste it first so it doesn't overwhelm the sun-dried tomato flavor. The carrots and celery give it a meaty mouthfeel so it's a good meal for when vegans and carnivores get together! I like this with whole wheat pasta.

Ingredients
- 3 tablespoons broth
- 1 1/2 cups diced onion
- 3/4 cup minced carrots
- 3/4 cup minced celery
- 28 oz cans crushed or diced tomatoes
- 1 1/2 tablespoons minced garlic
- 3 tablespoons italian seasoning
- 4 ounces sun dried tomatoes
How To Make sun dried tomato and veggie pasta sauce

Step 1Spray a large skillet or saucepan with nonstick cooking spray and then add broth and heat over medium. Add onions, celery and carrots and cook stirring frequently until the veg are softened.

Step 2Add both kinds of tomatoes, garlic and Italian seasoning. Bring to a boil then reduce heat to low and simmer 45 minutes.

Step 3Allow to cool slightly then puree in a food processor or blender. Serve over a thin pasta, like angel hair.
