1 clow fat ricotta cheese
1/4 cparmesan cheese
3 Tbspoilve oil, of your choice
·salt and pepper, to taste
8lasagna noodles, broken into 3rds, boiled til tender
1 Tbspminced garlic,from a jar or fresh
2 ptcherry tomatoes,halved
2 smallzucchini, thinly sliced
1/2 ctorn basil leaves
How to Make Summer Lasagna
- Combine ricotta,parmesan,oil,salt and pepper to taste.Set aside.
- Heat oil in skillet over medium high heat add garlic,tomatoes cook until lsightly broken down, about 3 mins.
- Transfer to bowl and zucchini to skillet (with a little more oil if needed ).Season with salt and pepper and cook about 5 minutes til tender.
- Transfer to anoter bowl. Scatter a few tomatoes over 4 plates. Top with one cooked noodle, a spoonful of ricotta mixture, zucchini and more tomatoes. Repeat layers twice,ending with noodle and tomatoes. Drizzle a little more oil on top. Garnish with basil leaves and serve...
