summer/autumn essentials: sausage & pasta skillet

This is my idea of a lazy Summer or Autumn day meal. It’s essentially a one-skillet dish. Add some freshly baked bread, and you have yourself a great repast. I used a combination of ground Italian and chorizo sausage, to give it a bit of a different flavor bend… Works for me. So, you ready… Let’s get into the kitchen

Ingredients

  • PLAN/PURCHASE.
  • 1 tablespoon olive oil, extra virgin
  • 1/4 cup italian sausage, freshly ground
  • 1/4 cup chorizo, freshly ground
  • 1/2 cup mozzarella cheese, freshly ground
  • 1/2 cup parmesan cheese, freshly grated
  • 4 - 5 ounces your favorite pasta, i’m using farfalle
  • 2 cups pasta sauce
  • 1/4 teaspoon oregano, dried variety
  • 1/4 teaspoon basil, dried variety
  • - salt, kosher variety, to taste
  • - white pepper, freshly ground, to taste

How To Make summer/autumn essentials: sausage & pasta skillet

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your ingredients (mise en place).
  • Step 3
    Cook the spaghetti in a pot of boiling water, until al dente.
  • Step 4
    Remove the pasta, and reserve with about 1/4 cup of the pasta water.
  • Step 5
    Add the oil to a skillet over medium heat.
  • Step 6
    Chef’s Note: This skillet needs to be big enough to hold all the recipe ingredients, and be ovenproof. My skillet of choice is cast iron, but any good ovenproof skillet will do nicely.
  • Step 7
    Add the Italian sausage, and chorizo to the pan, and cook until no longer pink, about 3 – 5 minutes.
  • Step 8
    Use a wooden spoon to break up the sausage into crumbly bits.
  • Step 9
    Add the dry spices to the pasta sauce, and season with a bit of salt and pepper, if needed.
  • Step 10
    Chef’s Note: I prefer my pasta sauce a bit on the chunky side.
  • Step 11
    Reduce the heat to low, add the sauce to the skillet, and combine with the cooked sausage.
  • Step 12
    Add the pasta, the reserved pasta water, and toss with the sauce.
  • Step 13
    Evenly sprinkle the two cheeses over the top.
  • Step 14
    Place under a broiler until the cheese is melted and bubbly, about 3 – 4 minutes.

    PLATE/PRESENT
  • Step 16
    Serve while still nice and hot with some crusty rolls. Enjoy.
  • Step 17
    Keep the faith, and keep cooking.
