Stove Top Johnny Marzetti

Kathy W

I remember this from my school days. This was one of the few dishes that everyone would eat in the cafeteria!

This is my vegetarian stove top version. (You can use ground beef in place of the Recipe Crumbles™ if you prefer.)

Stove Top

1 lb
elbow macaroni, cooked al dente.
1 medium
onion, diced
green pepper, diced
small amount of vegetable oil
1 large
can (28 ounces) diced tomatoes
1 large
can (46 ounces) tomato juice or vegetable juice (like v8 ®)
1 pkg
morningstar farm®meal starter grillers® recipe crumbles™ (or 1 pound ground beef, cooked and drained)
salt and pepper to taste
cayenne to taste
sugar if needed (to cut the acidity of the tomato)
cheese to garnish if desired

1Cook macaroni al dente (You want it slightly under done so it absorbs the sauce - it will finish cooking when you add the sauce and simmer it)
2While macaroni is cooking, saute onion and green pepper in oil. Add Recipe Crumbles™ (or cooked ground beef) and heat through.
3Add diced tomatoes and seasonings and heat through. (If necesssary, turn heat to low and keep warm until macaroni is done.)
4When macaroni is done, drain and return to pot. Mix in onion mixture and tomato juice. Return to stove and simmer for 10 minutes, check seasoning and serve. Garnish with cheese if you like.
