Ingredients

1 pkg
frozen spinach (10 oz.)
1/4 c
chopped scallions
12 oz
low fat cottage cheese
egg substitute to equal 1 egg
1/4 c
skim milk (optional)
1/4 c
chopped fresh parsley
1/2 tsp
salt (or to taste)
1/4 tsp
black pepper
1/4 tsp
garlic powder
20 large
pasta shells
4 c
meatless spaghetti sauce

How to Make SPINACH STUFFED SHELLS

Step-by-Step

  • 1Cook spinach and scallions in a small amount of water, following the directions on the spinach package; drain.
  • 2In a medium bowl mix cottage cheese, egg substitute, milk (if necessary to thin), and parsley. Add spinach and onion mixture along with salt and pepper and garlic powder. Mix thoroughly.
  • 3Partially boil pasta shells for about 9 minutes and stuff with spinach and cheese filling.
  • 4Spread about 1 cup of the spaghetti sauce on the bottom of a baking dish. Arrange shells in dish and top with remaining 3 cups of spaghetti sauce.
  • 5Cover and bake in a preheated 350-degree oven for 30 minutes. Serve hot.
