Ingredients
- 1 package frozen spinach (10 oz.)
- 1/4 cup chopped scallions
- 12 ounces low fat cottage cheese
- - egg substitute to equal 1 egg
- 1/4 cup skim milk (optional)
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 20 large pasta shells
- 4 cups meatless spaghetti sauce
How To Make spinach stuffed shells

Step 1Cook spinach and scallions in a small amount of water, following the directions on the spinach package; drain.

Step 2In a medium bowl mix cottage cheese, egg substitute, milk (if necessary to thin), and parsley. Add spinach and onion mixture along with salt and pepper and garlic powder. Mix thoroughly.

Step 3Partially boil pasta shells for about 9 minutes and stuff with spinach and cheese filling.

Step 4Spread about 1 cup of the spaghetti sauce on the bottom of a baking dish. Arrange shells in dish and top with remaining 3 cups of spaghetti sauce.

Step 5Cover and bake in a preheated 350-degree oven for 30 minutes. Serve hot.
