Ingredients

  • 1 package frozen spinach (10 oz.)
  • 1/4 cup chopped scallions
  • 12 ounces low fat cottage cheese
  • - egg substitute to equal 1 egg
  • 1/4 cup skim milk (optional)
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 20 large pasta shells
  • 4 cups meatless spaghetti sauce

How To Make spinach stuffed shells

  • Step 1
    Cook spinach and scallions in a small amount of water, following the directions on the spinach package; drain.
  • Step 2
    In a medium bowl mix cottage cheese, egg substitute, milk (if necessary to thin), and parsley. Add spinach and onion mixture along with salt and pepper and garlic powder. Mix thoroughly.
  • Step 3
    Partially boil pasta shells for about 9 minutes and stuff with spinach and cheese filling.
  • Step 4
    Spread about 1 cup of the spaghetti sauce on the bottom of a baking dish. Arrange shells in dish and top with remaining 3 cups of spaghetti sauce.
  • Step 5
    Cover and bake in a preheated 350-degree oven for 30 minutes. Serve hot.
