My good friend Norma gave me a heart-healthy cookbook for my birthday and this stuffed shell recipe is one example of healthy cooking.

  • 1 pkg
    frozen spinach (10 oz.)
  • 1/4 c
    chopped scallions
  • 12 oz
    low fat cottage cheese
  • ·
    egg substitute to equal 1 egg
  • 1/4 c
    skim milk (optional)
  • 1/4 c
    chopped fresh parsley
  • 1/2 tsp
    salt (or to taste)
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    garlic powder
  • 20 large
    pasta shells
  • 4 c
    meatless spaghetti sauce

How to Make SPINACH STUFFED SHELLS

Step-by-Step

  1. Cook spinach and scallions in a small amount of water, following the directions on the spinach package; drain.
  2. In a medium bowl mix cottage cheese, egg substitute, milk (if necessary to thin), and parsley. Add spinach and onion mixture along with salt and pepper and garlic powder. Mix thoroughly.
  3. Partially boil pasta shells for about 9 minutes and stuff with spinach and cheese filling.
  4. Spread about 1 cup of the spaghetti sauce on the bottom of a baking dish. Arrange shells in dish and top with remaining 3 cups of spaghetti sauce.
  5. Cover and bake in a preheated 350-degree oven for 30 minutes. Serve hot.
